Field to Table: Orange Wild Turkey and Rice

This Orange Wild Turkey and Rice recipe is so simple and one you'll really be drawn to, mainly because the sauce is so delicious! In fact, I love it so much I double the sauce portion of the recipe so I have extra. It's that kind of meal, made even better thanks to fresh orange juice, sesame oil, and rice vinegar, with a little soy, ginger, and garlic added in to balance it all out. Wild turkey is a nice substitute for chicken, which you'd typically find on menus for this style dish. Trust me, this will blow away any American Chinese take out meal you can find!

Orange Wild Turkey and Rice Ingredients

  • 1 Wild Turkey Breast
  • 1/3 cup Cornstarch
  • 1/3 cup All Purpose Flour
  • 1 teaspoon Kosher Salt
  • 1/2-2/3 cup Vegetable Oil
  • Cooked White Rice, for Serving
  • 2 Tablespoons Chopped Green Onions, to Garnish

Orange Sauce (Double the recipe if you like extra sauce!)

  • 2 Large Oranges, Juiced
  • 1 Teaspoon Sesame Oil
  • Zest From Half of One of the Oranges
  • 1/4 cup Rice Vinegar (or White Vinegar)
  • 1/4 cup Granulated White Sugar
  • 2 tablespoons Soy Sauce
  • 2 teaspoons Minced Garlic
  • 1/4 teaspoon Ginger Powder
  • 1/2 teaspoon Crushed Red Pepper, Optional
  • 1 tablespoon cornstarch, mixed with 2 tablespoons of water

Orange Wild Turkey and Rice Recipe Directions

1. Dice the wild turkey into ½-inch cube pieces and place it in a bowl. Add in the flour, cornstarch, and salt, then mix to entirely coat the wild turkey pieces.

2. In a deep frying pan, bring the oil to medium-high heat. Fry the wild turkey pieces until they are golden brown, about 2-3 minutes. Remove from pan and place onto a paper towel-lined plate, then set the plate aside.

3. Meanwhile, whisk all the sauce ingredients together in a bowl. Place a large skillet on medium heat and once it's warm, add the sauce and simmer until the sauce thickens. If you want to thicken further, then slowly pour in a cornstarch slurry (1 tablespoon cornstarch mixed with 3 tablespoons cold water) while stirring constantly.

4. Transfer the fried wild turkey pieces to the sauce and mix to coat well. Let the sauce and wild turkey simmer together for 1-2 minutes and then remove from heat.

5. Serve over white rice and garnish with chopped green onions.
