Elk Enchilada Dip: A Hunter's Twist on a Game Day Favorite

Elk meat, enchilada sauce and cheese? This meal has all the ingredients of a game day favorite!

Whether you're right in the middle of elk hunting season or pulling from your meat stores, it never hurts to try out new recipes, and this one is TASTY! The elk enchilada dip is the perfect multi-purpose meal and a great way to use wild game meat. Enjoy it nestled around the crackling campfire with your family after a long day of outdoor adventures, or use it as a tasty game-day appetizer for friends and family to enjoy.

To make this easy meal, brown the ground elk meat in a cast iron skillet, draining off any grease. If you don't have elk, you can always substitute ground beef if needed. Season to taste with garlic powder, cumin, and some salt before adding in the enchilada sauce. Add sour cream and cheese, stirring until it melts.

Ingredients

  • ½  to 1 pound ground elk
  • ¼ cup finely diced onion
  • 2 teaspoons cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 (10-ounce can) red enchilada sauce
  • ?..." cup sour cream
  • 2 cups shredded Mexican blend cheese
  • 1 tablespoon chopped cilantro
  • Tortilla chips for serving

Recipe Directions

  1. Brown ground elk in a cast iron skillet along with the onions, 5-7 minutes. Drain grease, if any.
  2. Season with cumin, garlic powder, onion powder, and salt and mix until well combined.
  3. Pour in enchilada sauce and mix well.
  4. Add in sour cream and stir until smooth.
  5. Add in shredded cheese and stir until completely melted.
  6. Serve immediately, garnished with cilantro and with tortilla chips for dipping.
