Rabbit hunting is a tried and true sport for hunters of every age, and rabbit meat is tasty and healthy. The high-protein meat is a deliciously tender meal enjoyed in many different recipes. Rabbits have a chicken-like taste if they're young and a beef-like taste as they get older. Rabbit is often added into stews, poached, or fried.
However, many people prefer fried rabbit. This buttermilk fried rabbit with mini waffles is a delectable breakfast treat that combines sweet and savory. Both waffles and rabbit are crunchy on the outside and tender on the inside. If you don't have access to rabbit, you can always make the recipe with chicken or pheasant with the same effect. Pair with syrup or Dijon mustard for a mouthwatering treat.
Buttermilk Fried Rabbit and Mini Waffle Appetizer
Fried Rabbit Ingredients
- 2 rabbits, deboned and cut into bite-sized pieces
- 1.5 cups buttermilk
- 1 cup all-purpose flour
- 1 tablespoon cornstarch
- 2 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
Other Ingredients
- Cooking Spray/Frying Oil
- 4-6 cooked waffles (Use either frozen mini waffles or prepared waffles cut into bite-sized pieces)
- Maple syrup, for serving
- Toothpicks
Recipe Directions
- Debone the rabbit, cut into bite-sized pieces, and soak it in buttermilk overnight in a ziplock bag.
- In the morning, combine flour, cornstarch, paprika, garlic powder, onion powder, and salt in a bowl.
- Remove the rabbit pieces from the ziplock bag and dredge them into flour mixture one at a time. Place them on a wire rack as you coat them.
- Fry the rabbit:

- Air Fryer Method: Air fry at 400 degrees until the rabbit pieces reach 165 degrees, approximately 5 minutes.
